Prior to joining Six Continent Group, Maurice worked with the Mandarin Oriental Group for a decade starting in 1987 in two different Countries. His recent appointment at the Mandarin Oriental in Jakarta from 1993 to 1997 was to manage a team of 120 cooks, and implemented a training program for a culinary team. Maurice contributed to the development, establishing and successful operation of the innovative restaurants concepts: Zigolini (Italian), Xin Haw (Chinese Restaurant), Kafe Kafe (Coffee Shop). His contributions to the re-designs and renovations of 6 kitchens during full operation of outlets also proved successful.
Prior to his transfer to Jakarta, Maurice worked has Executive Sous Chef for the Mandarin Oriental in Hong Kong. Assuming the responsibility for food cost control was among his duties of purchasing and assisting in organizing the centralized production kitchen where he managed 120 cooks in half a dozen restaurants. He holds official membership with the Hong Kong Chef association.
Maurice worked from various five-star hotels to free standing fine dining restaurants in Vancouver prior to moving to Asia. He has traveled and visited 20 countries, from North America, Europe, Australia to Asia and now brings his experiences home to Sudbury.
Now that Maurice has a new restaurant to care for, he plans on delivering an unforgettable customer experience at The Trevi.
